Pizza

1  Tortilla Whole wheat medium tortilla (Dempster’s 100% Whole Wheat)
1/4  cup Pizza sauce with sriracha
1/4  cup Grated Aged Cheddar cheese
1  oz Bell Pepper (any colour)
1  small Diced Green onion
1  oz Strips of Sundried tomatoes
1  tsp Dried Oregano

Sriracha Tomato Pizza Directions

  1. Heat a carbon steel frypan over medium heat. Place 1 whole wheat medium tortilla in the pan and lightly cook for 1-2 minutes per side until warmed and slightly crisp. Remove from heat.
  2. Spread 1/4 cup pizza sauce (with sriracha kick) evenly over the tortilla. Sprinkle 1/4 oz shredded aged cheddar cheese on top.
  3. Add 1 oz diced bell pepper (any color), 1 small green onion (diced), 1 oz chopped sundried tomatoes, and 1 tsp dried oregano evenly over the cheese.
  4. Return the tortilla to the frypan over medium heat. Cook for 5-6 minutes, checking the bottom every 30 seconds to prevent burning—lift with a spatula and move off and on the heat as needed.
  5. Remove from heat once the bottom is browned, the cheese is melted, and the sauce is bubbling. Let cool slightly, then slice or eat whole.

Recipe Notes

  • Green onions can be fresh or dehydrated; if using dehydrated, use 1 tsp and rehydrate with 1 tsp water for 10 minutes before adding.
  • Check the bottom of the tortilla every 30 seconds to avoid burning—move it off and on the heat as needed during cooking.
  • A medium tortilla is typically around 8" in size; pack in a sealed bag to keep fresh on the trail.
  • For extra heat, add a drizzle of sriracha or chili flakes before serving.
