Hash

1/4  cup Powdered eggs
1  tbsp Ghee butter
1  tsp Olive oil
1  tbsp Diced sundried tomatoes
1  small Diced potato
2  oz Sliced cured chorizo sausage
1  tsp Dried oregano
1/2  tsp Black pepper
1  pinch Salt

Topping

1/4  cup Parmesan Cheese
1  tbsp Chopped Parsley

Chorizo Breakfast Hash Directions

  1. Peel and dice 1 small (5 oz) potato into small cubes. Boil in a pot of water for 5-7 minutes until just tender, then drain and set aside.
  2. In a small bowl, mix 1/4 cup powdered eggs with 1/3 cup water until smooth.
  3. Heat 1 tbsp ghee and 1 tsp olive oil in a skillet over medium heat. Add 2 oz diced cured chorizo sausage and cook for 2-3 minutes until it releases its oils and crisps slightly.
  4. Add 1 tbsp sundried tomatoes and the pre-cooked potato cubes to the skillet. Cook for 3-4 minutes until the potatoes brown lightly and the tomatoes soften.
  5. Pour in the egg mixture, stirring occasionally, until fully cooked (about 3-4 minutes).
  6. Sprinkle in 1/4 cup grated Parmesan cheese, 1 tsp dried oregano, 1/2 tsp black pepper, and a pinch of salt. Stir until the cheese melts and spices are evenly distributed.
  7. Serve hot, garnished with 1 tbsp chopped fresh parsley and a dash of chili powder.

Recipe Notes

  1. For trail use, pack powdered eggs in a ziplock bag. Substitute sundried tomatoes with oil-packed ones if preferred (drain well to reduce weight). Use 1/4 cup dehydrated diced potatoes (rehydrate with boiling water for 10 minutes) if fresh isn’t practical.
  2. If fresh eggs are available, substitute the powdered eggs with 2 fresh eggs—cook them your way (scrambled, fried, or sunny-side up) after the chorizo and potatoes are ready.
  3. Cured chorizo is shelf-stable, making it ideal for outdoor adventures; pre-dice and pack in a sealed container.
  4. Adjust spice levels with more chili powder or a pinch of cayenne for extra heat.
